Peanut noodles are a sauce, not a shopping list. If the jar of peanut butter and the bottle of soy sauce are already open, dinner is noodles and a lime.

Ingredients

  • 8 oz rice noodles (spaghetti works)
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 lime
  • 3 green onions

A pinch of sugar or a spoon of honey if the peanut butter is unsweetened. Chili flakes if you want heat.

Method

  1. Soak or boil the rice noodles according to the package, then drain.
  2. In a mug, stir the peanut butter, soy sauce, grated garlic and ginger, and the juice of the lime with a splash of hot water until it is pourable.
  3. Toss the noodles with the sauce. Slice the green onions over the top.
  4. Add leftover chicken, tofu, or a handful of cabbage if that is what you have. Skip them if you do not.
