10-minute garlic sautéed broccoli

Broccoli is the vegetable people buy with a plan and then watch turn. Ten minutes in a hot pan with garlic is the plan. It is a side next to skillet lemon chicken or a bowl of rice if that is dinner.

Ingredients

  • 1 head broccoli
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1/2 lemon
  • Salt

Red pepper flakes if they are by the stove. Anchovies mashed into the oil if you keep a tin.

Method

  1. Cut the broccoli into florets. Slice the stems; they cook too.
  2. Heat the oil in a wide skillet over medium-high. Add the broccoli and a pinch of salt. Cook, stirring, until the edges char in spots, 5 to 6 minutes. Add a splash of water and cover 1 minute if the stems are still hard.
  3. Lower the heat. Add the sliced garlic and stir until fragrant, 30 seconds. Do not let it burn.
  4. Squeeze the lemon over the pan and eat.
